Brazilian Cheese Bread

This is one of our family's favorite recipes for making gluten-free bread. It has a great chewy texture, well-balanced flavor, and it's so easy to make that everyone can join in the fun. Try it out yourself, and you'll be surprised. Feel free to adjust the cheese, garlic, or chocolate and sugar amounts to your preferred flavor profile. Enjoy!

Ingredients

  • 2 cups of Tapioca Starch or Sweet Potato Starch
  • 1 to 1½ cups grated cheese (if making salty bread you can use stronger flavored cheese like cheddar or parmesan, but for Chocolate flavored, use a lighter flavored cheese such as mozzarella.)
  • 2 large eggs
  • 1 cup Milk
  • ½ cup of oil (we used light olive oil)
  • 1 teaspoon salt
  • 1 Tablespoon garlic (optional - for garlic flavored - omit if making other flavors)
  • ¼ cup of cocoa powder (optional - for chocolate flavored - omit if making other flavors)
  • ¼ - ½ cups of sugar (optional - for chocolate flavored - omit if making other flavors)
  • ½ - 1 cup of chocolate chips (optional - for chocolate flavored - omit if making other flavors)

Directions

  • preheat your oven to 375 Fahrenheit or 190 Celcious
  • grease your muffin tins with oil
  • Add your milk, eggs, oil, salt, and cheese into your blender
  • add your seasoning of choice (if making garlic flavored, add your garlic now, if making chocolate, add the cocoa powder and sugar)
  • add your starch into blender. (Do not add this before hand or the starch with gum up the blender)
  • Blend all ingredients until smooth
  • Stir in extra shredded cheese if desired for extra cheesiness. (Salty)
  • pour into well-oiled pans
  • For chocolate flavored bread, add desired amount of chocolate chips on top. (Stirring it in will help the bread rise better though)
  • bake for 20 mins or until golden brown.
