Ingredients
Dressing-
- 1 teaspoon of garlic
- 1 teaspoon of salt
- 1 teaspoon of cumin powder
- ⅜ cup of olive oil (6 Tablespoons)
- ½ teaspoon of Tabasco
- Juice of half a lime (to taste)
Salad-
- 2 cans of black beans (rinsed), or we like to cook our own black-eyed peas and add 2 cans worth
- 1 can of corn
- ½ cup of onion, celery, green pepper, and parsley
- ¼ cup of cilantro
- 2 large tomatoes
Directions
Crush the garlic with salt and cumin to bring out the garlic flavor, add all the dressing ingredients, and chill overnight to bring out the flavor.
Dice all the vegetables into the size of the corn, then mix. Pour dressing over the salad and adjust to taste. Chill before serving and enjoy!
